Chicken Burgers
Not your ordinary burger! This tasty combination of flavors will have your family asking for more.


Red medium pepper, seeds and ribs removed, quartered
   
Fine dry bread crumbs 1/3  cup 75  mL
Grated Parmesan cheese 1/3  cup 75  mL
Chopped fresh parsley 1/4  cup 60  mL
Liquid honey 1  tbsp. 15  mL
Large egg
Finely grated lemon zest 1  tsp. 5  mL
Ground cinnamon 1/2  tsp. 2  mL
Lemon pepper 1/2  tsp. 2  mL
Lean ground chicken 1 lb.  454 g 
   
Goat (chèvre) cheese, cut up 4  ounce 113  gr.
Kaiser rolls, split and toasted
Fresh spinach, stems removed, lightly packed 1  cup 250  mL


Preheat electric grill for 5 minutes or gas barbecue to medium-high. Cook pepper on greased grill (or broil in oven), skin-side down, for 10 to12 minutes until skin is blackened and blistered. Transfer to small bowl. Cover with plastic wrap. Let sweat for about 15 minutes until cool enough to handle. Peel and discard skin. Cut into thin strips. Set aside.

Combine next 8 ingredients in large bowl. Add ground chicken. Mix well. Divide and shape into 4 equal patties to fit kaiser rolls. Cook patties on same greased grill for about 5 minutes per side until chicken is no longer pink. Do not overcook.

Divide and spread goat cheese on both cut sides of each roll. Divide and layer red pepper on bottom half of each roll. Top each with 1 chicken patty. Divide and layer spinach over chicken patties. Cover with top halves of rolls. Makes 4 burgers.
