Matrimonial Squares

Favorite date squares that are not as messy to eat as some others. These crumbs hold together well.

Rolled oats (not instant)

All-purpose flour

Brown sugar, packed

Baking soda

Hard margarine (or butter), softened, cut up

DATE FILLING
|
|

Chopped pitted dates
|
1 1/2 cup
|
375 mL

Water
|
2/3 cup

150 mL

Granulated sugar

1/2 cup

Crumb Layers: Combine first 5 ingredients in large bowl. Cut in margarine until mixture resembles very coarse crumbs. Press slightly more than 1/2 of mixture firmly in greased 9 x 9 inch (22 x 22 cm) pan. Set remaining mixture aside.

Date Filling: Combine dates, water and sugar in medium saucepan. Bring to a boil on medium. Reduce heat to medium-low. Simmer, uncovered, for about 10 minutes until dates are softened and water is almost evaporated, adding more water if necessary while simmering to soften dates. Spread evenly over bottom layer of crumbs. Sprinkle remaining crumb mixture evenly over top. Press down lightly. Bake in 350°F (175°C) oven for about 30 minutes until golden. Let stand in pan on wire rack until cool. Cuts into 36 squares.
