Papaya And Mixed Greens
A very pretty salad with vibrant summer colours and a fresh dressing. This salad is sure to liven up your table!


Mixed salad greens 4  cups 1  L
   
Medium papaya, seeded (reserve 2 tbsp.,30 mL, seeds) and cut into 1/3 inch (1 cm) cubes
Medium tomatoes, quartered, seeded and cut into 1/3 inch (1 cm) cubes
Chopped green onion 1/4  cup 60  mL
   
MUSTARD DRESSING    
Peanut (or cooking) oil 3  tbsp. 50  mL
White wine vinegar 2  tbsp. 30  mL
Dry mustard 1  tsp. 5  mL
Liquid honey 1  tbsp. 15  mL
Salt 1/4  tsp. 1  mL
Pepper, sprinkle    


Arrange salad greens on 6 individual salad plates.

Top with papaya, tomato and green onion.

Mustard Dressing: Combine all 6 ingredients and reserved papaya seeds in jar with tight-fitting lid. Shake well. Makes 1/2 cup (125 mL) dressing. Drizzle over salad green mixture. Serves 6.
