Tomato And Feta Salad
Fresh and flavorful. Sesame Walnut Topping is a great addition to this or any salad.


SESAME WALNUT TOPPING    
Finely chopped walnuts 2  tbsp. 30  mL
Sesame seeds 1  tbsp. 15  mL
Cumin seed 1/2  tsp. 2  mL
   
Large tomatoes, quartered, seeds removed, chopped (about 2 2/3 cups, 650 mL)
Crumbled feta cheese (about 4 oz., 113 g) 3/4  cup 175  mL
Thinly sliced red onion 1/2  cup 125  mL
Pitted kalamata (Greek) olives 1/4  cup 60  mL
Chopped fresh mint leaves 3  tbsp. 50  mL
Chopped fresh parsley 2  tbsp. 30  mL
   
Olive (or cooking) oil 2  tbsp. 30  mL
Lemon juice 2  tbsp. 30  mL
Pepper 1/4  tsp. 1  mL


Sesame Walnut Topping: Heat and stir first 3 ingredients in small frying pan on medium for about 3 minutes until fragrant. Transfer to small cup. Set aside to cool. Makes about 1/4 cup (60 mL) topping.

Measure next 6 ingredients into large bowl. Toss.

Add olive oil, lemon juice and pepper. Toss. Divide among 4 salad plates. Divide and sprinkle topping over each. Serves 4.
