Tomato And Feta Salad

Fresh and flavorful. Sesame Walnut Topping is a great addition to this or any salad.

SESAME WALNUT TOPPING

Finely chopped walnuts
|

Sesame seeds
|

Cumin seed

Large tomatoes, quartered, seeds removed, chopped (about 2 2/3 cups, 650 mL)

Crumbled feta cheese (about 4 oz., 113 g)

Thinly sliced red onion

Pitted kalamata (Greek) olives
|
1/4 cup

Chopped fresh mint leaves

Chopped fresh parsley

Olive (or cooking) oil

Sesame Walnut Topping: Heat and stir first 3 ingredients in small frying pan on medium for about 3 minutes until fragrant. Transfer to small cup. Set aside to cool. Makes about 1/4 cup (60 mL) topping.

Measure next 6 ingredients into large bowl. Toss.
|
Add olive oil, lemon juice and pepper. Toss. Divide among 4 salad plates. Divide and sprinkle topping over each. Serves 4.
